"Noble King is one of the oldest beers we make, and is inspired by the hoppy pale beers from small producers in Europe like Thiriez, De Ranke, and De la Senne. Dry, bitter, with some interesting yeast complexity is what we aspire to with Noble King.
Noble King is testament to the versatility of mixed culture fermentation. When we commit beer brewed with little hops to oak barrels for months or years, it develops a pronounced acidity. But when we ferment for just weeks in stainless steel with a lot of hops, the acidity is kept at bay, and the beer is dry and bitter. For those who know us well, they recognize that we’re just as passionate about the hoppy pale beers of Belgium and France as we are about the barrel aged, wild ales.
